Biography: Prof. Dr. HenrykZieliński, SinceAugust 2011 HenrykZieliński holds the Chair of the Department of Chemistry and Biodynamic of Food at the Institute of Animal Reproduction and Food Research of the PolishAcademy of Sciences in Olsztyn, Poland.He received his Ph.D degree in 1996 in antioxidant vitamins application against effect of air pollutants. From 1996 up to present he does research focused onantioxidants from food of plant origin with special emphasis on cereals, pseudocereals, legumes and cruciferous, quality and quantity changes of antioxidants in technological processes, antioxidant capacity of the processed food of plant origin and dietary-derived antioxidants in functional food development. He is Editor-in-Chief of the Polish Journal of Food and Nutrition Sciences and member of American Chemical Society, Division of Agriculture and Food Chemistry, as well as reviewer of high quality top journals related to the food science.
